Gluten Free Namaste Chocolate Chip Blondies (Soy free, Peanut Free, Dairy Free).

Namaste Foods is a company I’ve talked about before, but I feel they’re worth mentioning again and again. They have some of THE best gluten free and allergen free mixes I have tasted in all of my allergy laden years. My personal favorite has to be their Blondie Mix–it stands perfectly on it’s own, but can be jazzed up even more with a little imagination and a few special ingredients. I love to add some allergen free Enjoy Life Semi-Sweet Mini Chips and some ground organic Saigon Cinnamon. I also add some more moisture into the mix by using So Delicious Sugar Free Coconut Milk instead of water, which actually doesn’t add much coconut taste at all. And soy free eggs are a must. If you are sensitive to eggs, egg replacement product by Ener-G works well too.

Their Waffle/Pancake Mix is also phenomenal and I vote it for the best Gluten Free (and allergen free) Pancakes on the market. Gluten-free Dark Chocolate Brownies (low glycemic)

This recipe is Soy free, Gluten-free, Dairy free, Sugar free and Yeast free.

Just before baking in the oven.

A few days ago I made my first from scratch brownie expedition…complete with homemade unblanched almond flour! I followed a basic recipe from here (Thanks Dawn!) and watched the dark chocolatey goodness unfold.

I made a slight variation from the otherwise low glycemic (sugar) recipe by adding Enjoy Life’s Mini Semi-Sweet Chocolate Chips, which added just the perfect hint of sweetness without being too sugary.

Dark Chocolate Brownies, 72 degrees in March, AND it’s my last day at a terrible dead end job?? And a phone interview with a kick butt company next week?? Things are looking good.

What could be better than chocolate and new chapters in life?
