On the Wild Inner Self and Breakfast Quesadillas

I used to be a wild child of sorts. I say of sorts because somewhere in my excitable nature, that lively and unfiltered strain of myself still lurks. You know, the part that spontaneously dances like mad with the grace of an uncoordinated five year old. Well, I suppose you don’t know but rather my sister does. Or the part that picks the most obnoxious parts of obnoxious songs and sings them loudly and repeatedly without thinking twice (Sorry Lindsey). Or the part that occasionally likes to split a bottle of wine on a Wednesday night and frolic around in the park and play on the playground. Yes, that slightly wild and silly part that I suppress sometimes (a lot more than I should) not only exists, but reels like crazy deep down. And I’m okay with that, now more than ever.

The past few months of this winter really had me feeling older than my years, down to aching joints and grumbling mornings to boot. I found myself suppressing my inner happy go lucky self in order to be taken more seriously and try to be more productive. Over the last few years actually, that has been the trend. After college graduation, I thought it was time to “grow up”. But I think the opposite of what I wanted to happen, happened. And I didn’t expect it. I became less interested with myself, more tired, and frankly more boring. I was working hard, and had some successes, but wasn’t really happy. I felt like a stifled, shushed, whiny, and tired-of-it-all woman. At my own hand no less.

This year, and even more so with the recent coming of spring, I find a familiar feeling bubbling up inside of me; something that makes me take a step back and wonder, “Hang on, where the hell have I been??” The other morning, I woke up with “Another One Bites The Dust” stuck in my head (don’t ask), and suddenly found myself belting out some Queen and shakin’ it like nobody’s business–like it was automatic. And it is, because it’s who I am. I’m dancing like crazy. I’m not being overly cautious. I’m not catering to what “they” might think. I’m finding more and more happiness with letting that wild vibrant spirit of mine come to light with the realization that I was perfectly imperfect before I tried to “grow up” too much. Perhaps I tried to suppress that part of me to make up for the time I thought I’d lost. My battle with undiagnosed gluten issues, food allergies, and ADHD made being successful difficult. Really difficult. I managed, but I had to work around these things for a long time and had to work A LOT harder than I do after diagnosis to make it all jive. Maybe I tried to kill that wild, silly, lovely part of myself because it reminded me of more hazy, uncertain, and unhealthier days. But the fact is, I’m not unhealthy anymore. I’m bursting with life and heart and crazy big opportunities that demand my inner vibrancy! It’s been a long time coming, but now I’m just finding I’ve reached that refreshing balance of being young at heart while still being a capable professional gearing up to take on the world. This is my crazy state of grace.

By the way, this really has nothing to do with gluten-free Breakfast Quesadillas, other than the fact that they’re also quite bold and pack a punch of spicy flavor. Oh well. I feel like my own authentic self now more than ever before. There’s something to be said for that.

Gluten-free Breakfast Stuffed Quesadillas

This recipe is free of: Gluten, Soy, Lactose (contains Casein), Peanuts, Legumes, and Refined Sugar.

Yield: One large Quesadilla

  • 2 brown rice tortillas, or gluten-free tortillas of choice (I use Food For Life brand).
  • 1 cup grated almond jalepeno jack cheeze (contains casein, but no lactose. I use Lisonatti Foods brand)
  • 1/2 cup diced onion
  • 1/4 cup diced green bell pepper
  • 2 tablespoons olive oil
  • 3 eggs, scrambled
  • Salt, Pepper, and Cayenne (optional) to taste
  • 1/4 cup green onions
  • Salsa of choice for serving (I use Mrs. Renfro’s Medium Salsa)
  1. In a small fry pan, saute diced onion and green bell pepper with spices.
  2. Add 3 eggs and cook until it becomes scrambled. Remove from the heat.
  3. In a larger fry pan over low/medium heat, add the first tortilla to the pan and cover with shredded almond cheeze. Add the scrambled eggs on top and sprinkle with a bit more cheese.
  4. Add the second tortilla on top and press down until the cheeze starts to melt. After about 3 to 4 minutes, carefully flip over the quesadilla and allow to cook the rest of the way on that side. The edges may get a little crispy, but just keep them pressed down with a pancake flipper or spatula.
  5. Remove from the heat and sprinkle with chopped green onion and salsa. Serve hot.

Gluten Free Happy Hour

Our homemade Pineapple Strawberry Cocktail with White Rum

For the newly diagnosed food allergic, gluten intolerant, or Celiac individual, the question I’ve been asked quite often is…

Okay, so you’ve told me what I can eat. Now what the hell can I drink?

I stick to basic and classic alcohols that aren’t distilled from grains– no fancy stuff or fake flavorings. You can easily dress up some plain rum or tequila yourself without the help of pre-made mixers and coolers (which often contain barley malt and other additives from soy). There is some controversy over whether grain distilled liquors are okay for Celiac or gluten intolerant individuals to consume. I can tell you from my experience, I have to stay away. Vodka distilled from grain has wrecked some pretty extreme havoc on me in the past and I’m not eager to do it again.

Though most vodkas are out for me, Ciroc vodka is made from grapes instead of grain. There are also some good potato vodkas out there, but a word of warning–they can be pretty strong!

My favorites/go-to’s for a Gluten-free, Soy free, Nut free, Cocktail Party:

  1. Bacardi Superior Rum
  2. Groundswell Organic White Table Wine (or Groundswell Red)
  3. Ciroc Vodka (from grapes, original frost flavor. I’m not sure on the other berry flavors).
  4. Luksusowa Polish Potato Vodka 
  5. Estancia Riesling (White Wine). I love the fruity flavor of a good Riesling. Don’t drink Wine if you are sensitive to yeast or sulfites. I’ve gotten much less sensitive to yeast, which is why I include it here.
  6. 365 Whole Foods Goat Cheese (contains Milk, Casein).  Cheese platters and Wine. Need I say more?
  7. Neon Flexi-Straws for pretty, fun smoothie Cocktails
  8. Jose Cuervo Especial Tequila
  9. Fresh Flowers. Roses are always a classic.
  10. Enjoy Life Crunchy Cookies (allergen free).

I don’t drink too often, but when I do, I….don’t drink Dos Equis. Instead I focus on what I can drink and jazz it up myself to make it special. I love blending fresh pineapple, strawberries, ice, and white rum together to make a delicious spiked tropical smoothie. Adding fresh organic fruits and herbs as garnish and fun straws just gives that extra special touch. Try a sprig of fresh basil or mint in your next homemade cocktail.

Review: Enjoy Life Chewy Bars

Gluten free, and allergen free? You know exactly how difficult it can be to find good on-the-go snacks and bites for long days or when traveling. Convenience stores and fast food chains hold next to nothing for those like us, which can be frustrating at times. I’m always looking for good energy boosters to throw in my bag…along with what seems to be the rest of my life. (Everything I need always finds it’s way to the bottom of the bag. Ladies, I know you can sympathize).

Enjoy Life Chewy Bars are a good item to toss in your purse or bag for on-the-run snacks, and they’re free of the top 8 allergens and gluten free. Enjoy Life was nice enough to send me a sample of all four flavors of the Chewy Bars–Sunbutter Crunch, Caramel Apple, Very Berry, and Cocoa Loco. (I was not compensated in any way for my opinion of the products, I only received them from the company).

The first thing I have to say honestly, is that the taste of texture of these products has increased ten-fold since the first time I tried them a few years back while I was first getting the hang of being gluten free. Before, they seemed a little too dense for me. But now, all the bars are bursting with flavor and a soft, chewy texture which is anything but dense.

They also updated the look of the packaging, complete with adorable bar codes! Super unique! Ok, yes I’m seriously talking about bar code designs right now, but I feel like it’s the littlest details that can make something that much more special. Or maybe it’s just the design obsessed junkie in me. I may or may not have rearranged my room on a monthly basis for years in the past. Don’t judge =)

The only thing I would say is a downfall of sorts when it comes to these Chewy Bars is their size. I remember them being a little bigger in the past, which I felt was the perfect size. With such an awesome recipe and taste, I find myself wanting to eat more for my snack. If the reason for the smaller size is regarding portion control, I feel it may be more beneficial to cut back just a tad on the sugar in the product instead of cutting back on the overall size in my opinion. The ingredients themselves are considered healthy and wholesome in general, such as sunflower seed butter and dried fruits. They are also loaded with vitamins and minerals that really pick me up.

I put in some long hours this week working from home, and these were an awesome counterpart.

Sweet Tooth

From time to time, it’s nice to indulge–in moderation of course. Most of these sweet allergen free treats can be found in my pantry on a rotating basis. Many of them are actually lower in sugar or organic sweeteners than normal sweets found in the grocery store. So you can satisfy that occasional craving while not setting your health back. Agave nectar, stevia, and organic fruit juices are some of the sweeteners that can be found in some of my favorite yums…I support a health conscious, and very moderate sweet tooth. The following items are gluten, soy, wheat, peanut, fish, shellfish, egg, and dairy free.

  1. Navitas Naturals Cacao powder–I add this to my Brown Rice protein shakes for a healthy boost of flavor with no added sugar. Just pure antioxidants.
  2. Navitas Naturals Raw Cacao Nibs–A strong source of healthy antioxidants. Add them to daily shakes, trail mixes flax cereals, gluten free oatmeal, and more. Read about the benefits of Cacao here, at the bottom of the page.
  3. Yummy Earth Organic Gummy Bears–All organic and natural gummies. NO artificial colors or anything! Some are even colored with beet juice–but trust me, they taste better than the super sugar laden versions you’d usually find in the candy aisle. Made in an allergen free facility.
  4. Enjoy life Crunchy Double Chocolate Cookies–Delectable! I compared the sugar content to Chips Ahoy (a popular “regular” allergy laden standard cookie brand) and found it to be about 2 times less sugar per serving size.
  5. Glee Gum, Bubblegum Flavor–I am so happy to finally find allergen free chewing gum! About to feel like a 5th grader again in 5..4…3..2…1…
  6. Surf Sweets Jelly Beans–Made in a facility free of the top 8 allergens.
  7. Luna and Larry’s Coconut Bliss Ice Cream in Dark Chocolate–They have so many awesome flavors to choose from, and what I especially love is that they use Agave nectar instead of processed sugar. They also refrain from using legumes like Locust bean gum and Carob bean gum (which I react to having soy and legume allergies). I LOVE this brand.
  8. and 9. VerMints, in Peppermint, Chai, and many other flavors–Free of the top 8 allergens, and made in a dedicated allergen free facility.

10.  Surf Sweets Gummy Fruity Hearts–Such a cute gift for your allergen free sweetie. No hints here at all.

11. Navitas Naturals Organic Goji Berries–Just raw goji berries and nothing else. A naturally sweet and healthy treat.

12. Enjoy Life Snickdoodle Cookies–Soft baked, chewy, cinnaminny goodness! My personal favorite of the moment.

In my Kitchen

Here are some of my favorite soy free, gluten free, legume free go-to items in my pantry and fridge as of late. I love to keep all these on hand for quick easy meals or snacks. These made the top 9….

  1. So Delicious Vanilla Coconut Milk (No Sugar Added)
  2. Enjoy Life Chewy Bars, Sunbutter Crunch –A great grab and go snack.
  3. Fresh or Dried (Organic) Dill — one of my favorite herbs that I add to nearly everything.
  4. Simply Organic Cayenne Pepper — I use it to add a kick to my dishes, and as a digestion aid. Almost every morning, I start my day with a warm glass of water with cayenne pepper. Taken 15 minutes before eating, nothing helps boost and clean your system better in my opinion.
  5. Ancient Harvest Quinoa — Made in a dedicated gluten and soy free facility (verified by personal email).
  6. Buckwheat — I buy mine from Meijer, which receives it straight from Poland. I adore Kasha (buckwheat porridge)!
  7. 365 Whole Foods Apple Cider Vinegar–There was no link available on the site, but you can buy it at any Whole Foods Market. I take about 1-2 tablespoons daily with a glass of water. It’s cheaper than Bragg’s brand, and it has no cross contamination with soy that I know of. I reacted strongly to Bragg’s apple cider vinegar since it is made on the same line as their soy heavy “Liquid Aminos”. I avoid Bragg’s for this reason.
  8. Olivio Coconut Spread –Soy Free, Gluten Free, Dairy Free. So good! It’s great for you too, since the main ingredient is healthy coconut oil. I love putting it on my tinkyada pasta and my quinoa dishes.
  9. Tinkyada Organic Brown Rice Pasta — My favorite gluten free pasta by far. They make 18 different types and shapes of whole grain brown rice pasta, including a fun shaped variety called “Little Dreams” which would be definitely make a cute meal for food allergic youngsters.
